


Almond Flour Pound Cake

Makes 3 mini loaves
Ingredients:
- 3 1/4 cup fine almond flour
- 1/4 cup arrowroot flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 tsp baking powder
- 3 eggs
- 2/3 cup maple syrup
- 5.4 fl oz can of coconut cream @nativeforestbrand
- 1/2 cup unsalted butter melted & cooled
- 2 tbsp vanilla extract
Directions:
1. Preheat oven to 350°F and grease 3 mini loaf pans with butter or coconut oil
2. In a medium bowl, whisk together almond flour, arrowroot flour, salt, baking soda, and baking powder. Set aside
3. In another bowl, add eggs and whisk lightly. Then whisk in maple syrup, melted unsalted butter, coconut cream, and vanilla. *make sure all wet ingredients are room temp*
4. Fold the dry ingredients into the wet and mix until combined. Pour batter evenly into greased tins and bake for 35-40 minutes or until a toothpick comes out clean.
I frosted mine with some homemade cream cheese frosting:) enjoy!
Note: best when served chilled overnight in the fridge for the most dense, pound cake like texture
